I’ve had the pleasure of working with Chef Davis over the years,
and his passion and enthusiasm for IDDSI are truly unmatched. We
were one of the first hospitals in California to implement IDDSI,
and from the very beginning, Davis embraced it. He immediately
began experimenting, developing recipes, and finding creative ways
to prove that texture-modified food could still look and taste
amazing.
Who knew tofu could be transformed into a decadent,
texture-appropriate chocolate dessert?! Davis was constantly
experimenting and thinking outside the box. He went on to create
numerous videos demonstrating IDDSI recipes and techniques, showing
others that pureed and texture-modified foods don’t have to be
bland or unappealing. One of my favorites was watching him recreate
the famous In-N-Out burger into a pureed masterpiece that was both
recognizable and appetizing!
What I appreciated most about working with Davis was how willing he
was to try new things, share his knowledge, and teach others. He
became an incredible IDDSI resource not only within our
organization, but for healthcare and foodservice professionals
nationwide. He even organized an IDDSI educational event that
brought dietitians, cooks, and other professionals from across the
United States together to learn, collaborate, and see firsthand
what can be accomplished with texture-modified foods.
Chef Davis has a genuine gift for combining culinary creativity
with the very specific requirements of IDDSI. His charisma,
enthusiasm, creativity, and dedication to elevating
texture-modified food are truly second to none. It was such a
pleasure working alongside him, and I’m excited to see him continue
sharing his expertise and showing others that IDDSI food can be
safe, compliant, visually appealing, and, most importantly,
delicious!
